We don't know how long Destiny spans; as we keep being reminded, we haven't read the outlines, much less the manuscripts.  A novel (of which Destiny is three, which gives it even more room to play with) spanning several months, or even an entire year, is not unprecedented: see Articles of the Federation or Rising Son or (IIRC) Fire Ship.
