Well, regarding crew complement, I do recall in "Yesterday's Enterprise," that Yar said the Galaxy-class was capable of carrying thousands of troops, so I can see a comparable increase in the Starfleet universe we know if families and civilians were no longer on board. Maybe they'd become even more multi-purpose, serving as troop carriers in some circumstances. Or maybe multi-generational ships for very long-range exploration/colonization to allow crew members to marry and have children.
