Honestly, at this point, no don't say the line at all. Let it remain the franchise's most famous unsaid line.
Question is, is Scotty going to be a permanent addition, or just a character who pops up now and then?
And that makes sense. SNW should really be about Pike's crew, but it's fun to see earlier incarnations of Kirk's bunch. Long as it's in moderation, and they don't feel like they have to do everyone. Kirk isn't supposed to take over for several years, so a lot of TOS crew aren't going to be there yet.
Actually amazed the Kelvin movies didn't. They couldn't avoid the low hanging fruit ("Khaaaaaaaaan!" etc)
Likewise, I pretty much assumed it was a guaranteed fact Trek XI would Say The Thing. I was genuinely surprised they didn't. I remember after I saw the movie I was talking to my uncle who hadn't yet seen the movie and his first question was "did they say 'beam me up Scotty?'"
